There’s a new fish making waves in the restaurant world. Hiramasa kingfish has the omega-3 essential fatty acids we all love and need in oily fish but delivers them in silky white flesh perfect for sashimi, ceviche, tartares and carpaccio.

How to cook kingfish

There’s a lot that can be done with this special fish. Part of the Trevally family and also known as yellowtail kingfish, Hiramasa has a broad-flaked texture ideal for baking, searing, grilling and barbecuing. It’s a great choice for curries. If you have a whole fish, use the offcuts and bones for making stock.

Kingfish on the menu

A favourite on the menu at maze is sashimi of Hiramasa kingfish with pecan nuts and dashi vinaigrette. Although pecans aren’t a typical Japanese ingredient, their sweetness pairs beautifully with the fish. The dish gets a little kick from a paste of yuzu and green chillies, a sultry drizzle of French pecan oil, and a flourish of kiku flower petals.

At other times our sushi chefs put juicy strips of Hiramasa through avocado-topped inside-out sushi rolls, or caramelise fine slices of it with a blow-torch to serve as nigiri.

Kingfish farming

Gordon Ramsay Restaurants buy Hiramasa kingfish farmed to exacting standards in the chilly Antarctic-fed waters of Port Lincoln, South Australia. The fish are certified as sustainable by Friend of the Sea, the non-profit, non-governmental organization concerned with conservation of marine habitats.

After hatching, the Hiramasa kingfish swim in the clean, open waters of the Spencer Gulf and are regularly monitored by dive teams to ensure optimal environmental conditions are maintained.

Fish farms of this standard do everything to maximize consistency and quality and the fish can be far superior to those caught in the wild. Freshness is key. Locally-caught white fish are often on the boat for days at sea because the fishermen keep fishing until the boat is full. By the time the fish come into the restaurant, the flesh is not as transparent as it needs to be for sashimi and sushi.
