Sushi at maze

An innovative twist for sushi lovers. Discover an authentic Japanese experience at the maze sushi bar, which elegantly combines exquisite tradition with thrilling modern influences. Guests will be able to enjoy sushi and sashimi dishes as the chefs work in front of you at the counter itself. Open every day from 12pm - 3pm and 6pm - 11pm.

Ben began his career at Queens College Cambridge, under Hans Schwietzer. While growing up Gordon was the chef of his generation who everyone looked up to, including Ben. Personal influences in Ben’s career were Colin Clague & Tim Hughes, both mentors who have shaped Ben into who he is today, in terms of character, cooking and respect for ingredients. 

Ben’s biggest culinary passion is thinking about the whole package and believes you have to break it down into sections. For Ben the ingredients are special when making a dish so simple but so good, like Tomato & Tofu Cream. His team is what makes him come back day after day, including some of the amazing apprentices we currently have at the group.

Key milestones in Ben’s career was when he moved to London at 19, his first opening of Zuma in Istanbul and meeting his wife at Zuma in Dubai. The opening of Sexy Fish was a huge accomplishment for Ben, but the opportunity to work for Gordon Ramsay Group with its amazing history has been a major milestone in Ben’s career. Ben is the Executive Head Chef of Maze Mayfair.

Starting his career as an apprentice in a 1 Michelin star restaurant in the home town of Sierentz, France, Alex’s father was a big part of his food influence and often they would cook together at home practicing the dishes that Alex had to cook for his university apprenticeship. This was Alex’s first steps towards his journey as a chef.

Alex’s biggest passion is food and travel, and enjoys searching for new food influences and cultures. His latest adventures took him to Mumbai, India - an incredible culinary experience. His passion for food also extends to food photography. 

A key milestone in Alex’s career was his opportunity to move to Florida. This was the first time he had left home, and it also led to the opportunity to be a part of the opening team of The Ritz Carlton Powers Court Garden in Ireland, his first experience in a Gordon Ramsay Restaurant.  

Alex joined Maze Mayfair in 2010 as a Junior Sous Chef until December 2016 where he held the Head Chef position. Alex returned to Maze as Head Chef in January 2018.
