Picanha Steak and Chimichurri

Ingredients

For chimichurri:

• 2 shallots — finely diced
• 1 bunch of chives — chopped fine
• 1 red chilli — deseeded and finely diced 
• 1 green chilli — deseeded and finely diced
• 3 plum tomatoes — de seeded and diced 
• 1 bunch of coriander — finely chopped 
• Olive oil 
• 1 lime juice 
• Salt and pepper to taste

For picanha:

• 1 picanha cut from the butcher. Ask for a top sirloin cap.
• coarse sea salt
