About Restaurant 1890 by Gordon Ramsay

In the year 1890, Georges Auguste Escoffier joined The Savoy Hotel and began creating his culinary legacy, including the creation of the Peach Melba, a dish to honor the opera singer Nellie Melba during her stay at the hotel

Restaurant 1890 by Gordon Ramsay pays tribute to Escoffier whilst offering an intimate dining experience, exclusively open for dinner and seating 26 guests. Serving a modern French tasting menu with European influences, the dishes are created from the finest ingredients sourced from all corners of the world alongside a carefully curated wine list that gives guests a broad choice of bottles and Coravin wine by the glass.

Executive Head Chef

Born in Tunbridge Wells, Kent, James studied Physical Education at Leeds Metropolitan University. During his studies, he started to cook for himself more and often made fresh bread and pasta for his house mates. After graduating, all he wanted to do was cook.

After being inspired by recipes from the 3-star chef, his goal was to work at Restaurant Gordon Ramsay, which he achieved. James started as a Commis and progressed through to Sous Chef under the mentorship of Matt Abé. He then took on a new challenge within Gordon Ramsay Restaurants at Pétrus, seeing him manage, grow, and influence the team. 

What James loves about working in the kitchen is that you can never stop learning - a different cuisine, product, technique, or skill. The changing seasons always brings exciting produce into the kitchen, which is what you will see at Restaurant 1890 with James leading and inspiring the team.

Sarah Rhone

General Manager

Growing up in Southampton, Sarah was fortunate to be able to travel from a young age, exploring and experiencing different cuisines throughout the world. This led to her joining the hospitality industry upon finishing college, and she has not looked back.

Sarah moved to London in 2014 and started working at 2 Michelin-starred restaurant The Square under Phil Howard. Then, at the age of 25, she became the General Manager for Michelin-starred Elystan Street in Chelsea, bringing a huge sense of achievement.

Sarah has now moved into the role as General Manager at Restaurant 1890 by Gordon Ramsay and has been at the helm of this new opening in The Savoy Hotel. Striving to provide an experience her guests will always remember and seeing her team excel in their careers is what drives Sarah, and she has brought this passion to her role at Restaurant 1890.

Emanuel Pesqueira

Head of Wine

When growing up, Emanuel’s family called him “the perfect host”, so it was only natural that he has ascended through a wide variety of roles within the hospitality industry in recognition of his performance and service delivery.

With over 20 years in the industry, Emanuel has worked across some well-known brands, including working on board Crystal Cruises for 10 years. During this time, he has seen more than 3,000 cities around the world, enjoying fine food and wine experiences as he went. In 2023 he was delighted to have placed 10th in the illustrious Top 100 Sommeliers in the UK.

Inspired by Master Sommelier Eric Zwiebel, Emanuel is all about how wine can make you feel after the first sip. This liquid has taken him to science, history, tradition, and even to nature. He believes that drinking wine is all about the experience and the memories, and looks forward to bringing this passion to Restaurant 1890 as Head of Wine across across Restaurant 1890, Savoy Grill and River Restaurant within The Savoy hotel.
