The vital work of the Sauce and Garnish sections often goes unnoticed by guests but is crucial to every plate. Every dish is finished to order, with sauces and final garnishes added carefully at the pass. The Garde Manger, responsible for preparing salads and cold elements, sits directly beside the pass, ensuring that every plate is built to perfection with seamless coordination.
