As the original maze Grill location, maze Grill Mayfair brings signature rare breed steaks to you as well as succulent steaks from the U.S, Japan, and of course, Britain itself. But as well as all this, you can enjoy a range of fish and poultry options too – all of which are grilled to perfection on our Montagu grill. Before the steaks reach the grill, they are aged on-site at maze Grill Mayfair in special Himalayan salt lockers to give you the best tasting steaks possible. If you’re in the mood for something a bit different, then try our delicious selection of sushi and sashimi at our dedicated raw bar.

This Mayfair restaurant is the ideal location for when you’re looking for a relaxed venue to eat with friends and family, or if you’re planning an intimate meal with your special somebody. But that’s not all, we can also help you host business meetings to impress clients and colleagues alike. For when you’re bringing the whole family, the kids will eat for free all day, every day from our special Children’s Menu.

Executive Chef

Owen was born in Surrey and grew up on the Isle of Wight where his parents ran a successful fish restaurant. Inspired by his parents’ passion for food, he moved to London at the age of 17 to start his chef apprenticeship at the prestigious Mandarin Oriental in Knightsbridge, which at the time held 5 AA Rosettes and a Michelin Star. From there, he worked within the kitchens of a number of high profile restaurants across the capital including Foliage under Hywel Jones; Lola’s; and at Damian Hirst’s Pharmacy restaurant in Notting Hill. After taking time off to travel through Australia, New Zealand and Asia, Owen took a Senior Sous Chef position at the Bildeston Crown public house in Suffolk, which gained 3 AA Rosettes during his time at the stove.

Accepting an offer to join the Gordon Ramsay Group, Owen joined maze in 2010 as Junior Sous Chef, later advancing to Senior Sous. In 2012, he was promoted to the position of Executive Sous Chef within the group, a varied role which required flexibility and dedication as he assisted at restaurants across London and also Gordon Ramsay Group’s international portfolio, including restaurants in Doha and the United States. Owen has recently taken the stove as Executive Chef at Gordon’s newest London restaurants – Maze Grill Park Walk and Maze Grill Royal Hospital Road as well as maze.

Mamadou Sankare

Mamadou has been passionate about food ever since he was young and credits this to his mother who has always been dedicated to cooking for everyone she could. Mamadou is originally from Sénégal and in the local language they call it the country of Teranga which means ‘the country of hospitality’. It’s in his culture to cook large amounts of food for all visitors and that’s how Mamadou fell in love with cooking for people and decided to make it his career.

Mamadou went to France, Grenoble after High School to pursue his dream and study cooking. After graduating he traveled, before deciding to bring his expertise home and worked for the Buddha Bar in the newly opened Radisson Blu Hôtel. Mamadou received an offer to work at the US Embassy, cooking for the embassy employees and marines present in the country. He had the pleasure to meet and shake hands with Barrack Obama during the inauguration of the new embassy building. 

Mamadou moved to London over 4 years ago, attracted by the diversity of the culinary scene. His 

biggest culinary passion is to make people’s taste buds happy and loves to discover and use new spices which he implements into every dish at maze Grill Mayfair.



Our sister restaurant, maze, is housed in the same building as maze Grill Mayfair and offers delicious dining from Executive Chef Owen Sullivan and a dedicated sushi bar.

Playfully innovative, maze continues to tear up the rule book by re‐working modern European dishes with an inspired Asian flourish. The fare at maze meanwhile crosses continents with a selection of small plates that are ideal for menu explorers.
