Head Chef

Behzad Gotla

Originally from Mumbai, Behzad has been based in Scotland for the majority of the past decade and brings his diverse experience to the table from AA Rosette kitchens and five star luxury hotels to casual family restaurants.

Behzad began training in his native India at the kitchens of luxury five star hotels including the Hyatt Regency in Mumbai, Hyatt Regency Kolkata and the five star Taj Fort Aguada in Goa.

In 2006, he relocated to Edinburgh where he spent a number of years at AA Rosette-awarded restaurants including Le Monde in the centre of the city’s ‘new town’ and, most recently, at Aqua within the Apex Hotel.

Behzad now joins maze Grill Mayfair as Head Chef.

Executive Head Chef Matt Pickop

Matt started his culinary career at Teatro Kitchen under Stuart Gillies, now Gordon Ramsay Group’s Managing Director, who took Matt along with him to Gordon Ramsay at Claridge’s. With a desire to travel, Matt moved to Dubai where he became executive head chef of the award-winning restaurants Glasshouse and Verre by Gordon Ramsay and then Abu Dhabi with the position of chef consultant during the Formula One Grand Prix.

Returning back to London in 2012, Matt became senior sous chef at the Savoy Grill before taking up his current position as Executive Head Chef of maze and maze Grill.

General Manager

Vincent Derdar

Dedicated and passionate about the hospitality and catering industry, Vincent Derdar brings a wealth of knowledge to his recently appointed role as General Manager at maze –the elegant and innovative Michelin-starred restaurant from Gordon Ramsay Group on Grosvenor Square in Mayfair.

Having earned his stripes at restaurants and hotels across the world, including The Boundary in East London, Rhodes 44 in Abu-Dhabi as well as Michelin starred Rhodes 24; Vincent is certainly up to the challenge. At maze, Vincent will take over the managerial role, from welcoming customers through the door to managing the front-of-house team.

Our sister restaurant, maze, is housed in the same building as maze Grill Mayfair and offers michelin-starred dining from Head Chef Alex Thiebaut and a dedicated sushi bar.

Playfully innovative, maze continues to tear up the rule book by re‐working classic French dishes with an inspired Asian flourish. The fare at maze meanwhile crosses continents with a selection of small plates that are ideal for menu explorers.
